Guilt Free Vegan Pizza
Yes, pizza CAN be yummy and guilt free at the same time made in your very own oven at home. Have I blown your mind yet?
Today was my Plyometrics and Ab Ripper X workout day brought to you by overly enthusiastic fitness robot, Tony Horton :P After hundreds of calories burned, sweat soaked towels, and frustrated grunts... I needed a good ol hearty meal to satisfy my body VEGAN STYLE. Blair came up with the idea of making a vegan pizza so we headed straight to our Kroger grocery market for our veggie based meal. I know what you must be thinking, butttt the gooey cheese and and andddd the pepperonis?! -_- thanks for the tease Amanda!! Well don't judge a book by its cover (or by its plate I guess you could properly say) because BOTH ingredients are vegan based, no meat or soy/dairy used to make the "meat" and "cheese." This is what is great about living near a Kroger or Whole Foods grocery store, these vegan options literally save your day sometimes when you really have a hankering for meat or dairy, but don't want to cheat your diet. Check around your area for grocery stores with Vegan options, they taste like the real thing!! (Well Blair begs to differ lol but she is a Texas meat eating machine born and raised). Which by the way babe, I am totally proud of you for doing this Vegan thing with me :) We have both lost some serious poundage cutting out meat and dairy from our diet.
OK OK, here is the recipe courtesy of Blair :)
Ingredients:
Veggie Daiya mozzarella cheese (First ingredient is filtered water, arrowroot flour, and pea protein!)
Veggie Yves pepperonis (Made from Tofu)
Red wine
4 tomatoes
1 Peeled and sliced avocado
Chopped white and green onions
Garlic salt
Flat out flat bread (sun dried basil tomato flavor)
Cook down the tomatoes and onions with wine. When the
tomatoes turn into sauce, add a little garlic salt (not to much with the sodium, don’t want to
defeat the purpose) then on a pizza pan lightly spray with nonstick spray.
Layer your pizza starting with the flatbread, sliced avocado, homemade sauce, mozzarella, and then
pepperonis. Put your vegan pizza in the oven set at 350 until the cheese is melted.
Enjoy and all for under 500 calories!!
